If bright, fruity coffee leaves you queasy, the acidity is usually why. Sawtooth Sky goes the other direction: Brazilian beans from the Cerrado Mineiro, pushed deep into a French roast until almost all of the bright acidity has roasted off. What's left is dark chocolate, smoked cedar, and a heavy, smooth body that drinks easy black — no milk needed to soften it.
Why It's Low Acid
Two things drive it: the bean and the roast. Low-grown Brazilian arabica starts out far less acidic than high-altitude African or Central American coffee, and the longer, darker French roast breaks down most of the chlorogenic acids that survive a lighter roast. We don't chemically treat it or strip anything out — it's low acid because of how it's grown and roasted.

- How acidic is it, really? About as low as coffee gets without going to a treated or "acid-free" processed product. No sharp or sour edge — all body and chocolate.
- Will it be gentler on my stomach? Most people who switch to a dark, low-grown roast find it noticeably easier to drink black. We're roasters, not doctors — if you're managing reflux or an ulcer, check with yours.
- Is it bitter or burnt? No. Pushed to the edge of a French roast, then stopped — heavy and resinous, not ashy.
