5 Cold Brew Myths That Coffee Chemistry Just Busted

Cold Brew Is Having a Moment. The Science Hasn't Caught Up to the Marketing.

Cold brew isn't a trend anymore. It's a category. The global cold brew coffee market was valued at roughly $3.79 billion in 2026 and is projected to nearly double to $8.36 billion by 2031, growing at a 17% annual clip, according to Mordor Intelligence. Every coffee shop has it on tap. Every grocery store has a shelf of it. And every brand selling it repeats the same three claims: it's smoother, it's less acidic, and it's packed with more caffeine than hot coffee.

We went looking for the actual chemistry behind those claims, the peer-reviewed kind, not the kind printed on a can. Some of it holds up. Some of it doesn't. Here's what the research actually says, and what it means for how you should be brewing this summer.

Myth 1: Cold Brew Has Way More Caffeine Than Hot Coffee

This is the one that surprises people most. Cold brew concentrate feels stronger because it's often sipped over ice at full strength or barely diluted, but ounce for ounce, it doesn't necessarily out-caffeinate a hot cup. A 16-ounce cold brew averages around 200 mg of caffeine, while a 16-ounce hot brewed coffee can range from 210 to 360 mg, depending on the roast and brew method, according to data compiled by Healthline.

The reason comes down to extraction efficiency, not bean quantity. Hot water is simply better at pulling caffeine out of ground coffee. Cold brew uses more beans per batch, but the lower temperature makes the whole process less efficient at extracting that particular compound. More beans steeped longer doesn't automatically mean more caffeine in the cup. It means a different, more concentrated flavor profile, which is a separate thing entirely.

Myth 2: You Need to Steep It for 24 Hours

Open any cold brew recipe online and you'll see instructions to steep for 18, 20, sometimes 24 hours. A study published in Scientific Reports measured caffeine and chlorogenic acid concentrations over time and found something the marketing hasn't caught up to: extraction reaches equilibrium according to first-order kinetics between 6 and 7 hours. After that point, you're not extracting meaningfully more, you're just giving stale grounds more time to sit in water.

That doesn't mean an overnight steep is wrong. A lot of the flavor development people associate with a long steep is really about convenience, not chemistry. But if you're impatient, a well-measured 7-hour steep will get you most of the way to the same result as an 18-hour one.

Myth 3: Grind Size Makes or Breaks Your Cold Brew

Home baristas obsess over grind size for pour-over and espresso, and for good reason there. But the same study found that grind size did not significantly impact caffeine or chlorogenic acid concentration in cold brew. The theory: because cold brew steeps for hours instead of minutes, extraction is governed by diffusion through the bean's internal structure over time, not by how much surface area is exposed up front the way it is in a fast, hot extraction.

Practically speaking, a coarser grind is still worth using, mostly because it filters cleaner and leaves less sediment in your cup. But if you're worried a slightly-off grind size is going to tank your batch, the chemistry says relax. Cold brew is more forgiving than almost any other brew method.

Myth 4: Cold Brew Is Way Less Acidic

This is the most misunderstood claim in the entire category, and the research shows why. A study in Scientific Reports measured the pH of hot and cold brew side by side and found them comparable, ranging from 4.85 to 5.13 across both methods. Cold brew is not meaningfully less acidic by pH. That part of the marketing is oversimplified.

Where the two methods actually diverge is titratable acidity and antioxidant activity. Hot brewing extracts a higher concentration of the acidic compounds responsible for that sensation of sharpness, along with more antioxidants overall. So while cold brew won't necessarily read as "less acidic" on a pH meter, it does deliver a different, rounder acid profile, which is likely what people are picking up on when they describe it as smoother or gentler on the stomach. The perception is real. The pH explanation for it isn't.

Myth 5: Dark Roast Makes the Best Cold Brew

This one runs counter to what most cold brew brands push. Dark roasts dominate the canned cold brew aisle because bold, low-acid, chocolatey flavors read as "cold brew" to most palates. But the same chlorogenic acid and caffeine study found that medium roasts produced higher concentrations of both compounds than dark roasts when cold brewed. Higher roasting temperatures degrade the chlorogenic acid precursors that contribute to flavor complexity and caffeine retention, so a lot of that dark, heavy-bodied cold brew is actually working with less to begin with.

This is exactly why we roast single-origin beans to order rather than pushing everything toward a dark, one-size-fits-all cold brew roast. A well-sourced medium roast has more going on chemically, and it shows up in the glass.

How to Actually Brew a Better Batch

  • Steep 12 to 16 hours, not 24. You'll hit full extraction well before the day is up. Overnight in the fridge is plenty.
  • Reach for a medium roast. The chemistry backs it up: more chlorogenic acid, more caffeine retention, more of the origin character you actually paid for.
  • Use a coarse grind for clean filtering, not because it changes the chemistry, but because it keeps sediment out of your cup and makes straining easier.
  • Don't over-dilute. Cold brew concentrate is typically brewed strong on purpose. Cut it with water or milk to taste rather than assuming it needs less caffeine.
  • Check the roast date. Fresh beans still matter here. Stale beans produce a flatter, duller cold brew regardless of steep time.
